Fruit Trifle

Fruit trifle is a light summer dessert. Layers of sponge cake, fruits and whipped cream makes it a delightful  dessert. Number of variations can be applied to this dish. Here I am sharing the recipe with pictures ...

 Ingredients:

Sponge cake
Chopped fruits - Canned or fresh ( Pineapple, Cherries, kiwis, strawberries etc.)
Cream - 1 cup
Powdered Sugar- 3/4 cup
Serving glasses or bowls

Method:

Chill serving glasses or bowls.

Whip cream and powdered sugar till peaks forms.

Crumble / crush sponge cake coarsely.

Make sugar syrup by dissolving 1 tablespoon powdered sugar and 3 tablespoons water.

Now in the chilled bowls, make a layer of crumbled cake. Press the layer. Sprinkle sugar syrup on the layer.


Now add a layer of whipped cream gently.

Add a layer of chopped fruits. Try to cover as much as possible.



Again add a layer of whipped cream.

Garnish with chopped fruits again.

Chill in refrigerator for 2 - 3 hrs.

Serve the individual bowls..

Mango Mousse

Mango is fruit of the season and nobody can escape from its fragrance and taste. I tried this Mango Mousse which I found was not that difficult to make. Though I learned that mousse should be moulded in the same dish in which you want to serve. Here I am trying this recipe with pics...

Ingredients:

Mango puree - 2 cups
Heavy cream - 1 cup
Eggs - 2 egg whites
Powdered sugar - 1.5 cup
Gelatin - 1 tbs ( animal or plant)
Water - 1/ cup
Mango pieces and tutty fruity for garnishing.


Method:

Warm 1/2 cup water and dissolve gelatin in it.

Take 2 egg whites and whisk vigorously or with a whisker, till soft peaks form.


Take 1 cup of heavy whipping cream, add 1/2 cup powered sugar in it and whip till soft peaks form.


Dissolve remaining sugar in mango puree.  Mix dissolved gelatin.

Now slowly fold whisked egg white and whipped cream in the puree.



Pour in mould of your choice. before pouring u may sprinkle some tutty fruity on the base.

Refrigerate for 3- 4 hrs. and then unmold.

Garnish with mango pieces and top with whipped cream and tutty fruity. Serve.

Banana Fritters with Jam Sauce

Banana Fritters is an easy fruity dessert. Here I am sharing it with pictures..

Banana fritters with Jam Sauce

Ingredients :

For Fritters-

Ripe Bananas- 2
Sugar - 4 tbs.
All purpose flour (Maida) - 1/2 cup
Baking soda - A pinch
Milk - 1 cup
Oil for frying
Vanilla essence - 4 drops

For Jam Sauce-

Jam- 1/2 cup ( of your choice)
Butter - 2 tbs
Sesame seeds - 1 spoon
Water - 5 tbs

Method:

Fritters-

Peel the bananas, cut from middle, then cut length wise, as shown.. (though you can cut in any shape)



In a bowl, take all purpose flour, add a pinch of baking soda, sugar and slowly pour milk and mix with the help of a whisk. Make batter.




Heat oil in a wok. Take pieces of banana one by one with the help of a fork and roll into the batter properly.

Now put this in hot oil and fry till it turns golden brown.



Then take out and drain off excess oil.

Banana Fritters are done.

For Jam Sauce-

In a fry pan, heat 2 tbs of butter.


Add 1/2 cup of jam. Slowly jam will start melting.


Add 5 tbs of water and mix. It will start boiling. Add sesame seeds and turn off the flame.


Jam sauce is done.


Now, place banana fritters on a serving plate and pour jam sauce on it. Serve immediately.
