Stuffed Bell Peppers / Capsicum

Stuffed Bell Peppers is a household dish. Very popular side dish is visually appealing too. This dish can be baked or pan cooked. Green bell peppers stuffed with spicy mashed potato and onion is a sure hit for lunch or dinner. Here, I am sharing this recipe with step by step instructions..



Ingredients:

Green bell peppers/ capsicum - 2
Boiled potatoes - 3 big
Onion - 1 big chopped
Ginger - 1 inch piece, chopped
Green Chillies - as per taste, chopped
Coriander seeds -1/2 tablespoons, crushed
Salt - 1.5 teaspoon
Coriander powder - 1 teaspoon
Garam Masala - 1 teaspoon
Aamchoor / dried mango powder - 1 teaspoon
Red chilly powder -1/4 teaspoon

Method:

Preheat oven at 200 degrees.

Wash bell peppers and scrap the stem side in such a way, that it can act as a lid.

Mash boiled potatoes, add chopped onion, green chillies, ginger, crushed coriander seeds. Add all dry masalas and mix properly.
Now stuff this mixture in each bell pepper only till 2/3 level.( it comes out when heated). Cover each pepper with their stem lid.


Brush lightly with oil and bake for 20 minutes at 180 degrees.

Serve hot with chapati, paratha.

Stir Fried French Beans With Potatoes / Aloo Beans

French Beans is cooked as a dry vegetable with potatoes or without potatoes in an Indian home. French beans are a great source of carbohydrates and dietary fibres. Here I am sharing this simple recipe with step by step pictures....

Ingredients:

French beans - 150 gms
Potato - 1
Cumin seeds - 1 tbs
Green Chillies - 1
Garlic - 3 cloves
Turmeric powder - 1teaspoon
Coriander powder - 2 teaspoon
Garam Masala - 1 teaspoon
Red chilly powder - 1/2 teaspoon
Salt - 1 tbs
Mustard Oil - 5 tbs
Method:

Wash and chop french beans in slants or simple cut. Peel potatoes and cut in small pieces.

Chop garlic and green chillies.

Heat mustard oil in a pan or a kadhai. Well, in India we like to use mustard oil for dry veggies and for mutton dishes because of its strong flavor.

When fumes come out of oil, turn flame on low, add cumin seeds, green chillies and garlic. After 30 seconds add turmeric powder, coriander powder, chilly powder and after 10 seconds add chopped vegetables.


Toss veggies with the masala. Add salt now. mix again.

Cover the pan and let the veggies cook on medium low flame.

Keep tossing in between, usually after every 3 minutes. It takes approx 25 minutes to cook completely. You can check by pressing a potato piece.

If done add garam masala powder and mix. French Beans are ready.

Serve with Paratha, chapati, puri..Makes a good and healthy tiffin vegetable too.

Potato stuffed Indian bread / Aloo Parantha

Aloo Parantha is now worldwide famous dish..Thanks to Punjab to actually give it a local exotic frame. Spicy boiled potatoes stuffed in parantha, topped with a dash of white butter with masala curd is a heavenly dish. Ask an Indian and he will rarely say no to it. A simple breakfast dish or a tiffin dish, aloo parantha is loved by one and all. Here, I am sharing the recipe with pics...


Ingredients:

Boiled potatoes - 2
Green chillies - 2 chopped
Coriander leaves - 1/4 cup chopped
Ginger - 1tbs chopped
Red chilly powder - 1/2 tbs
Garam masala - 1/2 tbs (optional)
Amchoor powder - 1/2 tbs (optional)
Onion - 1 chopped ( optional)
Wheat flour dough - For 5 paranthas
Salt to taste.

Method:

Make semihard dough out of wheat flour and water..take help from the pictures.





For stuffing, mash boiled potatoes, add all the ingredients except wheat flour and salt.

Mix properly.

Now divide dough into balls. Take a ball , make a well in the centre with the help of thumb and forefinger and stuff about minimum 1 big tbs of potato stuffing in it. Then seal the edges.




On one side heat a tawa / skillet on gas. On another side, roll stuffed dough ball on the dry flour and with the help of a rolling pin, flatten it a bit. You don't have to make it thin, its better if the stuffing doesn't comes out.

Slowly place this parantha on the hot tawa, let it cook for approx 3 minutes.

Now flip the side and pour one tbs of oil and smear it all over the parantha. Till this time the lower side must be cooked. so again flip it. Press with a spatula for even cooking. Keep flipping till you get the crispiness of your liking.


Remove parantha from the tawa and place it in a serving plate. A dash of butter adds to the taste and serve with mango pickle and masala curd.

Jeera Aloo

Potato is a versatile vegetable and number of dishes can be made from it. A very common yet a very tasty dish Jeera Aloo can be prepared in a jiffy. This is a great tiffin recipe. One can pack anfd carry it while travelling also. Here I am sharing the recipe with pics...

Ingredients :

Potatoes - 3 boiled and crushed
Cumin - 1 tbs
Mustard seeds - 1/2 tbs ( optional)
Green chilly - 1 chopped
Turmeric powder - 1/2 tbs
Coriander Powder - 1 tbs
Red chilly powder - 1/2 tbs
Amchoor powder - 1/2 tbs
Green coriander leaves - chopped
Salt to taste
Mustard oil - 5 tbs

Method:

Heat mustard oil in a wok. Add cumin and mustard seeds. As they splutter add chopped green chillies.

Now add all dry masala as mentioned in the ingredients.


Add boiled potatoes and mix.



Jeera aloo is ready. Garnish with chopped coriander leaves and serve with Parantha, chapati or pooris.

Stir Fried Cabbage with Potato

Cabbage is rich in potassium and is used in various forms. Stir fried cabbage is a tasty dish widely cooked in Indian homes. It is accompanied by Parantha or Chapati. This dish is dry in texture. Here , I am sharing its recipe with pictures..





Ingredients:

Cabbage - 2 bowls, shredded or coarsely chopped.
Potato - 2 cut into pieces.
Tomato - 1 chopped
Green Chilly - 1 chopped
Cumin - 1/2 tbs
Garlic- 2-3 cloves chopped
Ginger - 1/2 inch piece chopped
Coriander leaves - 3 tbs chopped
Turmeric powder, coriander powder, chilly powder, Garam Masala - 1/ tbs each
Mustard Oil for stir frying



Method:

In a wok heat 6- 7 tbs of mustard oil. Once hot add cumin and as they splutter, add chopped garlic, ginger, chily and saute for few minutes.




Now add turmeric powder, coriander powder, chilly powder and salt as per taste and mix for 30 seconds. Immediately add potato pieces and shredded cabbage to avoid burning of masala. Now mix it fast.




Cover the lid of wok. After 2 minutes toss the vegetable again for even cooking . Keep stirring and tossing in between till the potato pieces get cooked properly. Add chopped tomato at this time and toss. After 3-4 minutes, put the flame off. Sprinkle Garam masala and mix.


Stir fried cabbage with potato is ready. Garnish with chopped coriander leaves and tomato slice. serve.
