This make ahead preparation is very helpful for working women like me. Learnt this from mom in law and now it has become a habit. I make this red gravy in a large batch and use as and when required. I have used it in many of myy recipes too. Here I am sharing the recipe with pictures..
Onions - 5 medium, chopped
Tomatoes - 4 big, chopped
Garlic - 15 cloves chopped
Ginger - 1 inch piece chopped
Green chillies - 4 chopped
Oil for frying
Heat approx 1/2 cup of vegetable oil in a wok. Add chopped onions, garlic, ginger and chillies. Saute till onions begin to turn golden.
Now make the paste of sauteed onion mixture and tomatoes in a blender.
Again heat 1/2 cup of oil in a wok. Pour the paste and saute.

Again heat 1/2 cup of oil in a wok. Pour the paste and saute.
Cook the paste till it starts leaving oil. Its done. Can be stored in refrigerator for a week during summers.
