Deviled Eggs

Deviled Eggs is a worldwide famous recipe. Savoured across the world, this is easy to make and very creative dish. The filling can be done in a number of combinations. This is a fine egg recipe and good for get togethers..Here I am sharing the recipe...



Ingredients:

Eggs - 3, hard boiled.
Mayonnaise - 1 big tbs.
Mustard Sauce - 1/4 tbs
Pepper powder - 1/4 tbs.
Garam Masala - 1/4 tbs.
Salt - to taste
Coriander - Chopped


Method:

Remove shells from the eggs. Cut in halves (lengthwise).  Remove yolks in seperate bowl.


Mash the yolks properly. Add Mayonnaise, mustard sauce, pepper powder, salt, garam masala and  1/2 tbs coriander. Mix properly.



Put the mixture in a piping bag or anything which makes filling easier. Overfill the eggs.


Sprinkle little bit salt and pepper powder.

Garnish with chopped coriander.






You can make fillings of your choice...

Poha - Rice flakes dish

Poha is one of the famous Indian breakfast dish. Easy to make, this dish is light and nutritious. I make it very often in the breakfast accompanied with fruit or vegetable juice. I am sharing the recipe with pictures..



Ingredients:

Poha - 2 cups.
Groundnut - 1/4 cup
Chopped green chilli - 1
Onion - 1 chopped
Coriander - chopped
Mustard Seeds and cumin - 1/2 tbs. each
Curry leaves - few
Potato- 1 cut in small pieces
Turmeric powder, Garam Masala, Red chilli powder - 1/2 tbs. each
Salt -to taste
Lemon juice - 1
Oil - 5-6 tbs.


Method:

Soak poha in water for 7-8 min. and drain. Keep aside.


In a wok, heat oil. Once hot, add mustard seeds and cumin. As they splutter, add curry leaves, potato pieces and fry, till they become almost soft.

Now, add onions and groundnuts. Fry onions till they get golden colour.


Now, add Turmeric powder, salt, chilli powder, garam masala. Saute and add drained poha in it. Mix well. saute for few minutes.



 Put the flame off. Add Lemon Juice.

 Serve and garnish with chopped coriander.

Truffles -- The word only is mouth watering.. This quick and easy dessert can enlighten your imagination and whoa... just start using your creativity on this scrumptious delicacy.

 I made these choco banana truflles coated with roasted and crushed peanuts..


This dessert is extremely easy and I am sure kids will love it.. I took some pieces of banana and coated them with melted dark chocolate. then crushed some roasted peanuts and coated the choco banana balls with it..Freeze and serve.. All fruity and nutty ...No guilt !!!

Will come with more truffles version...

Fried Seer (Surmai) Fish..



Seer fish or commonly known as Surmai fish is the king of fish tikkas or fried fish, as It's an extremely soft, single bone fish. Our winters just can't go without it.. I tried this recipe first time and it came out fine but this is something I need to learn more..Well, sharing it here..


Ingredients :

Seer Fush / surmai - 8 Pieces (bone removed and de-skinned)
Lemon Juice of 1 big lemon
Salt, Red chilly powder, Garam masala powder,Coriander Powder, Deggi mirch ( for colour)
Oregano or any other flavouring herb- 1/2 tbs
Ginger Garlic paste - 1tbs
Oil for frying


Method:

Wash the pieces.
In a mixing bowl, add Ginger garlic paste, 1 tbs salt, 1/2 tbs coriander powder, 1/2 tbs garam masala powder, 1/2 tbs red chilli powder, 1/2 tbs deggi mirch, 1/2 tbs oregano and lemon juice. Now mix it.




Add fish pieces in it and mix it properly and keep it covered in refrigerator for half an hour.

After half an hour, deep fry those pieces in oil in a wok.



Put fried pieces on tissue so that extra oil gets absorbed.
Sprinkle chaat masala over the fish pieces.
Serve with raw onion rings or fried onion rings and coriander chutney.

Fried Potato in Spinach Gravy

Spinach has always been a main vegetable in Indian cuisine. Besides its peculiar taste, it has number of nutrients too. My family loves palak paneer, but everytime the same ?? Naah..so I tried this variation and they absolutely loved it.. Obviously the sauteing part is the most important step of this recipe.. So, sharing it with ya all...

Ingredients:

Spinach (Palak)- 1kg.
Potatoes boiled- 4 nos.
Onions- 200gms.
Tomato-250 gms.
Ginger chopped- 1tbs.
Garlic chopped- 1tbs.
Green chillies chopped- 1tbs
Ginger garlic paste – 2tbs
Turmeric powder, coriander powder, red chilli powder, Garam masala powder, salt, Cumin seeds- ½ tbs.
Bay leaves, 5 cloves, 1 small cinnamon stick, 8 black peppers
Oil for frying.


Method:

Wash, cut and boil spinach. Once boiled, puree it in a blender.
Cut small pieces of boiled potatoes and deep fry in hot oil. Drain in tissue and keep aside.
Put  wok on gas stove, put some oil.  In hot oil, add 2 bay leaves, cloves, cinnamon stick, black pepper.
When these splutter, add chopped ginger, garlic, green chillies, onion and sauté. When onion turns transparent, add chopped tomatoes. Sauté again for few minutes and then grind it.

Fried potato, pureed spinach, grind onion, tomato mixture.

Again in a separate wok , put some oil and switch on the flame. Now , add cumin seeds in hot oil. When seeds splutter, add ginger garlic paste. Saute for few seconds and then add onion tomato mixture. Saute again.


When mixture starts to leave oil, add spinach puree . Keep sauteingthe whole mixture till water evaporates.

Once done, add ½ tbs turmeric powder, 1 tbs coriander powder, ¼ red chilli powder, ½ tbs garam masala powder, 2tbs salt. After few seconds, add some water and bring a boil.
Add fried potatoes now. Again bring to a boil.


Fried potato in spinach gravy is ready.
Garnish with shredded ginger.
Serve with naan or rice ..
